Under the guidance of acclaimed chef Marcel Ravin, this elegant beachfront venue blends Caribbean soul and Mediterranean finesse into an immersive vegan culinary journey.
The restaurant reopened in 2024 with a sleek new interior and expansive terrace facing the sea. Ravin’s “Jardin” tasting menu is entirely vegan—no butter, eggs, or cream—crafted with seasonal produce from the hotel’s organic garden. Each course is a balance of refinement and imagination, drawing on his Martinican heritage and Riviera influences.
To accompany the dishes, Blue Bay offers a unique non-alcoholic pairing experience featuring infusions, ferments, and extractions designed to mirror the complexity of wine—delicate, precise, and in harmony with the menu.
Recognized with a second Michelin star and named to Les Grandes Tables du Monde, Blue Bay sets the standard for vegan fine dining in Monaco. The pastry program, led by chef Floriane Grand, was also awarded the 2025 Passion Dessert title for its vibrant, fruit-forward compositions.
